The brewery and restaurant U Tří růží in Prague is situated in the historical center on Husova street close to the famous Charles Bridge and Old Town Square. Right after your entering the feeling of the unique atmosphere of an Old-Prague brewery will overcome you. The feeling is intensified by wall-paintings by artists Jiří Bernard and Pavel Jakl who drew and painted pictures about the history of brewing in the Czech lands as the rich history of the house (the brewery U Tří růží).
You may notice brew-houses on the ground floor where under the leadership of our experienced brew master Robert Maňák you have the chance to try 6 different beers.

The combination of our best method standards, highest quality ingredients and the traditional craftsmanship of brewing in Czech lands allowed the brewery U Tří růží to gain the status of a monastic brewery of the Dominican Order which is located not far from the building. Thanks to this we have picked up the threads of a very old brewing tradition which began in the 15th century.The house itself has a very interesting history. In the year 1405 an important brew master Benešgained for the house the right to brew beer and started one of the oldest chapters of brewing in the Czech lands. In later history we can find that Václav Matěj Kramerius moved his publishing house Česká Expedice here and remained till the year 1804. You may notice a plaque in the house's frontage.

Apart from beer we would love to offer on this memorable spot some of our specialties from the Czech cuisine which are cooked under the leadership of our chef Martin Procházka, who came here from hotel Arcon which has just recently gained a Michelin Star. In our menu which he prepared for our restaurant you will find numerous specialties best to go with beer, our special season and daily menus.

In our brewery U Tří růží a wide variety of beers (top and bottom-fermented) are brewed by our experienced brewer Robert Maňák. In combination with modern technologies, traditional methods and high quality ingredients we guarantee you the best quality beer. A 10 hectoliter brew house made by Pacov Machine Works is placed directly on our ground floor of our restaurant and is supplied with fermentation tanks and lager tanks in our medieval dungeons. Our brewery products 1200-1500 hectoliters per year. Thanks to our offered tour provided with a expert commentary our guest get to see the production and brewing of our beer with their own eyes.

Brewing beer has to start with the malt. Malt is made in the malt house by germinating grain. After this procedure the grain is dried, scraped and the whole mixture is put into the mash tun/kettle.

The kettle is the metaphorical heart of the brewery. In the first faze the malt is mixed with water at the temperature of 35 degrees Celsius and slowly heated.

A part of this solution (called mashout) is pumped over into the bottom part of the mash tun (an insulated brewing vessel with a false bottom) where the heating starts at a constant temperature of 63 to 73 degrees Celsius so the enzymes are deactivated.
Next the whole brew is pumped over into a "lauter tun" where the grains are separated from the sweet wort (called lautering). Then the sweet wort is pumped into another vessel where it is boiled for about an hour at the temperature of 100 degrees Celsius. After adding hops we get hop wort...

Which then travels into a heat exchanger, where it's cooled to a temprature when yeast can be added safly, (10 degrees) after that the hop wort is pumped into fermentation tanks.
Here the main fermenting process comes to order. Brewing yeast is added into opened tanks and it lets the beer ferment for 8-12 days at 7-10 degrees. Draft beers lie in the fermentation tanks for about 10 days, lager 12 days. The main part of alcohol is created during this process.

After that the beer goes into the cellar where in different fermentation tanks it ferments for another 40 days at 1 to 3 degrees.

Robert Maňák
Robert Maňák

Robert Maňák the brew master of the brewery U Tří růží was born in České Budějovice where he studied food processing and brewing. His career started in Prague in the monastic brewery Strahov where he met for the first time with real brewer practice and gained the opportunity to learn from the best from his craftsmanship. It didn't take long and his beer gained recognition of many satisfied beer drinkers. Robert has gained dozens of domestic awards in various contests.
Robert Maňak himself is a big lover of beer and his craftsmanship. He is proud of his own work and proclaims: „I brew beer only from the best ingredients and according to my own methods which are a part of my know-how. I am always enthusiastic and excited. The best reward for me is when people drink my beer and like it and want to return.“ In our brewery U Tří růží Robert Maňák made good use of his many-year experience. On a regular bases he is brewing three basic beers - lager, semi-dark lager and dark lager. These beers are replenished by beer specials which he knowing hot to brew more than 30 types Robert Maňák gives our guests the opportunity to try new beers during every visit in our brewery. New beers from around the whole world.

Kinds of beer

The offered beers are various. Top and bottom-fermented, brewed from the best domestic and foreign ingredients. They give you the opportunity to taste the various types of traditional beers and beer specials.

  • Lager

    Bottom-fermented pilsner beer. We use highest quality Czech ingredients and traditional recipe.

  • Vienna Red

    Quality beer with a delicate aroma of Vienna malt with reddish tone and special balanced fullness and fresh finish.

  • Dark Rose

    Heavy special dark beer with a higher bitterness taste and tones of chocolate-flavored roasted barley. Beer is brewed from five kinds of malt and two kinds of hops.

  • Witbier

    Light traditional Belgian wheat beer spiced with coriander and orange peel. This beer is fruity, refreshing and slightly cloudy in appearance.

  • Monastic special of St.Giles №1

    Semi-dark Bock, the first of a series of monastic beer specials, prepared by four kinds of malt and aromatic hops.
